Beef on Weck Sushi Roll

I love this dish! Seabar, on Ellicott Street, has turned one of Buffalo’s signature dishes into sushi.
Beef-on-Weck is a rare roast beef with horseradish on a kimmelweck bun which is a bulky roll with coarse salt and caraway seeds baked on top.
The sashimi masters at SeaBar take a strip of seasoned beef tenderloin, about the width of a crab, sear it fast and wrap it in sticky rice. Then wrap a shaving of raw tenderloin around that. With the salt and seeds sprinkled on top and horseradish cream squiggled around the plate the roll is served.
It is amazing!
